Ingredients

  • 1 large watermelon slice 2 inches thick
  • 1/2 cup unsweetened vegan yogurt
  • 1/4 cup shivered almonds
  • 1/4 cup roasted coconut pieces
  • 1/4 cup agave 

Fruit topping:

  • 1 pint strawberries destemmed and cut into quarters
  • 6 oz blackberries
  • 6 oz raspberries
  • 1 pint blueberries
  • 1/4 cup pomegranite seeds
  • 1 kiwi sliced
  • 1 star fruit sliced

Instructions

  • Slice chilled watermelon into 2 inch thick slices. Set aside the largest slice and refrigerate the rest.
  • Cut watermelon slice into 6 or 8 equal pieces.
  • Prepare fruit by washing and draining well. Slice the kiwi and the star fruit.
  • Spread watermelon with unsweetened yogurt.
  • Layer fruit evenly on top of the yogurt. Completely cover the yogurt but don't pile the fruit.
  • Sprinkle the almond slivers and the coconut pieces on top evenly.
  • Just before serving, slowly pour the agave evenly over the fruit.

Notes

For a festive look, you can add the remaining fruit to the edge of the serving dish. Serve the fruit along with the watermelon cake slice.
