Ingredients

  • 1 cup rolled oats
  • 1/2 cup vegan yogurt  plus more as needed
  • 2 medium organic apples grated
  • 1/3 cup chopped pecans
  • 2 tablespoons almond butter
  • 2 tablespoons raisins
  • 2 tablespoons dried cherries 
  • 1/2 cup nondairy milk plus more as needed

For Serving

  • Fresh fruit
  • Dried fruit
  • Chopped nuts
  • Sweetener of your choice

Instructions

  • In a deep container with a lid, layer the oats, yogurt, apples, pecans, raisins and cherries. Cover with soy milk.
  • Cover and refrigerate for at least 1 hour and preferably overnight.
  • To serve: Spoon oats and toppings into 4 bowls. Make sure to include all layers.
  • Top individual servings with fresh or dried fruit, yogurt,  nuts and maple syrup or agave syrup. Add more milk if desired.
