Gluten free Crumpets

Ingredients

  • 1 cup gluten free flour blend
  • 1/2 cup coconut flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2/3 cup unsweetened plant based milk
  • 2/3 cup lukewarm water
  • Vegan butter for greasing pan and crumpet rings

Instructions

  • In a mixing large bowl, combine the flour, the baking powder and baking soda. Stir until well mixed. Slowly add the milk and water. Stir until batter is smooth and lump free. Let batter sit for 5 minutes.
  • Generously grease two crumpet rings with butter. Set aside. If you don't have crumpet rings use metal biscuit cutters.
  • Add vegan butter to a large skillet, and heat over medium high heat. Place the crumpet rings into the pan. Fill each ring 1/3 full of batter, making sure tops are even and the batter fill the entire ring. Fry for 3-5 minutes until the edges are set and there are air bubbles on top of the crumpets.
  • Flip crumpets carefully. Fry another 1-2 minutes until crumpets tops are slightly golden.
  • Repeat with the remaining batter.
  • Serve immediately or let cool on a baking rack and freeze for later use.

Notes

Make sure not to fill the crumpet rings more than 1/3 full. If the crumpets are too thick, they won't cook in the middle.
You can also toast these crumpets. Split in half or toast whole.
