Green Bean Almondine

Ingredients

  • 1.5 lbs French green beans (haricot verts) trimmed
  • 2 tablespoons vegan butter
  • 1/4 cup raw slivered almonds
  • 2 teaspoons freshly squeezed lemon juice
  • 1/2 teaspoon stevia seasoning or seasoning of your choice
  • Freshly ground black pepper

Instructions

  • Over high heat, bring a large pot of water to a boil.
  • Once boiling add the green beans and blanch for about 3 minutes, stirring occasionally.
  • Remove when they are crisp-tender. You want to insure they are slightly undercooked as they will cook some more when sauteed.
  • Set a large wok or deep skillet over medium low heat. Roast the almonds, stirring, until lightly browned, about 1 minute. Remove from heat and set aside.
  • Melt the butter slightly in the wok.
  • Add the green beans, lemon juice, seasoning and sauté, stirring gently until well mixed.
  • Add the sliced almonds and stir until combined.
  • Once well heated remove green beans from pan and place in a serving bowl or dish.
  • Serve immediately.
