Ice Cream with Olive Oil and Dates

- 4 teaspoons extra virgin olive oil
- 4 Medjool dates chopped or ripped into a few pieces
- 4 scoops vegan vanilla ice cream
Chop or rip the dates into small pieces and set aside.
In a small skillet, heat the olive oil and dates over medium high heat, stirring constantly. Continuing cooking and stirring until dates become slightly crisp and translucent, about 1 to 2 minutes. Immediately remove from heat and pour into a small heat proof bowl.
Scoop the ice cream into 2 bowls. Scrape and pour the dates and oil evenly over the ice cream. Serve immediately.
Drizzle vegan honey or other sweet syrup over ice cream and add a few roughly chopped pistachio nuts before serving.
