I had a lovely holiday. I had a vegan Christmas dinner at a vegan restaurant with my family which was a first. They aren’t vegan but they are not opposed to it. My son, who is not vegan, told me he had tried a cauliflower steak and was impressed. If he is impressed by a vegan dish, I’m impressed so I decided to give them a try.

Making Cauliflower steaks

This is a very easy and healthy recipe, perfect for vegan newbies and also those detoxing from heavy holiday fare. It is basically just roasted, dressed cauliflower. Roasting really does great things to vegetables and this steak served with some quinoa or rice is a hearty yet not heavy, very satisfying meal.

To make, place cauliflower evenly on the parchment paper or baking mat. The steaks are done when the edges are slightly blackened.

Healthy and Delicious

These make a lovely light lunch or can be formal enough for a dinner party. They are a great meal to serve to your non vegan, veg-phobic friends. They will be amazed at how delicious and satisfying vegetables can be.

Cauliflower Steak

Ingredients

  • 1 head cauliflower

Marinade:

  • 1 lemon
  • 1/3 cup avocado or canola oil
  • 1 teaspoon stevia seasoning or salt free seasoning of your choice
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 teaspoon Italian seasoning

Garnish:

  • 1 small bunch fresh parsley

Instructions

  • Preheat oven to 475 degrees F.
  • Line a baking sheet with parchment or a silicone baking mat. Set aside.
  • Remove peel from the lemon with a knife. Chop lemon into quarters and place in a food processor.
  • Add the rest of the marinade ingredients and process until smooth. Set aside.
  • Remove the outer leaves from the cauliflower and trim the stem.
  • Resting it on its base start slicing it from one side. Each slice should be 1 inch thick. Don't worry if the cauliflower crumbles, you will get 2-4 full steaks from the center it and you can bake and serve the crumbles as well.
  • With a pastry brush liberally coat one side of the cauliflower steak and pieces and place on the baking sheet. Once all the cauliflower in one the sheet, brush the top side with the dressing as well.
  • Bake for 25-30 minutes or until cauliflower is slightly browned and the edges are slightly blackened.
  • Remove baking sheet from the oven and serve immediately.
