How to Make Vegan Ice Cream with Olive Oil and Dates
For this recipe, I use my favorite commercial vegan ice cream, but I’ve also tried this recipe with homemade banana and soy milk nice cream and it tasted just as good. So use whatever you prefer, as long as its vegan.

Tip: To make serving easier, I like to pre-scoop my ice cream and keep the scoops in the freezer until I’m ready to use them. This saves time and effort and keeps the ice cream from melting when scooping for serving.
Instructions:
● Prescoop Ice cream and return it to the freezer in a closed container
● Rip or cut dates into bite size pieces. Set them aside.
● Heat a small skillet with the olive oil on the stove.
● Once heated, add the dates.
●Cook stirring, until the dates are slightly crisp and caramelized, 1-2 minutes.

● Remove skillet from heat and let dates and oil cook slightly.
● Once the date and oil are cooled a bit, remove the ice cream scoops from the freezer and place in two serving dishes.
● Spoon the dates and pour the oil evenly over both bowls, and serve immediately.
I sometimes serve this with vegan honey or other sweet syrup and chopped pistachios, but it tastes really great all on it’s own.

Ice Cream with Olive Oil and Dates
Ingredients
- 4 teaspoons extra virgin olive oil
- 4 Medjool dates chopped or ripped into a few pieces
- 4 scoops vegan vanilla ice cream
Instructions
- Chop or rip the dates into small pieces and set aside.
- In a small skillet, heat the olive oil and dates over medium high heat, stirring constantly. Continuing cooking and stirring until dates become slightly crisp and translucent, about 1 to 2 minutes. Immediately remove from heat and pour into a small heat proof bowl.
- Scoop the ice cream into 2 bowls. Scrape and pour the dates and oil evenly over the ice cream. Serve immediately.
