Peanut Butter Noodles

Peanut Butter noodles are my number one go-to recipe when I don’t feel like cooking and want something fast, easy and delicious for dinner. Foolproof and endlessly satisfying, they are the perfect comfort food.

Yikes, this summer! It’s been great and lovely often but also very hot and very wet. This is new for Toronto, and added to the high humidity levels, which aren’t new, it’s left me really uninterested in spending alot of time cooking. But because no one can live on popcorn for dinner every night, I have had to find a few recipes that count as real meals, but don’t involve alot of ingredients, prep or cooking. This summer, my favorite go-to recipe has been peanut butter noodles, and they have done all a summer meal should do.

Peanut butter noodles are really easy to make, plus you can portion and freeze them, and you can add whatever veggies you have on hand to make them more filling and nutritionally complete. They are also super yummy, just spicy enough and perfect for summer casual dining, indoors or al fresco.

Making Peanut Butter Noodles

Making peanut butter noodles is super fast and easy, and you probably already have the ingredients you need in your pantry. To make things even easier, begin by creating a mis en place. Premeasuring and collecting all your ingredients is a great way to insure you won’t forget any ingredient or improperly measure them.

Ingredients

Begin the recipe by cooking the noodles. You can use any kind of long, thin noodle, gluten free or not. Once they’re cooked, drain them well, reserving the cooking liquid and set aside. Next, make the peanut butter sauce by combining all the sauce ingredients in the medium size bowl. Taste test and adjust as needed. Pour the sauce over the noodles a half portion at a time, until noodles are well coated. Serve them in a bowl or plate with chopped peanuts, sliced green onion and cucumber and extra hot sauce if desired.

Peanut butter noodles are a fast and easy summer or anytime classic, and you’ll be surpised how delicious they are. You can also fancy them up by replacing the peanuts with sesame oil and seasame seeds for a Korean style noodle, or adding chopped raw or lightly stir fried veggies for added flavour and nutrients. Ingredients

  • 1 340 g package of spaghetti or linguine gluten free or regular

Peanut Butter Sauce

  • 1/2 cup natural peanut butter
  • 4-6 tablespoons vegan butter
  • 1/4 cup reserved pasta water optional
  • 1-2 tablespoons soy seasoning
  • 1 teaspoon salt free seasoning commercial or homemade
  • 2 teaspoons hot sauce
  • 1 teaspoon garlic powder

Garnish

  • 1 green onion trimmed and sliced
  • 1/3 cup chopped peanuts
  • Sliced cucumber julienned

Instructions

  • Cook noodles according to the package instructions. Once cooked, drain well and set aside. Do not rinse.
  • Combine the peanut butter, butter, soy seasoning, seasoning and hot sauce in a mixing bowl. Stir to combine. Add a little reserved pasta water, up to 1/4 cup if needed to make a thick yet easily pourable sauce.
  • Taste test sauce and adjust recipe according to your taste.
  • Pour 1/2 the sauce over the noodles and stir until noodles are well coated. Add the rest of the sauce and mix again.
  • Serve noodles warm. Garnish with sliced green onion, chopped peanuts and julienned cucumber.

Notes

This recipe is very adjustable and variable depending on your ingredients. Be sure to taste test and adjust sauce to your taste before adding.
