As the weather gets warmer, I always begin to eat lighter and healthier. Also, last year I added working out to my daily routine, so I’ve become more focused on high protein, healthy meals and snacks. Chia seeds and oats are a great way to get protein and nutrients with no fat. They are also super easy and versatile as this recipe proves. It’s fast, yummy and healthy, everything a breakfast or after workout snack should be.

I make my own trail mix with ingredients from my local bulk food store. I included goji berries, dried mulberries, almond slices and toasted coconut slices. You can use these or make your own mix. For topping I used frozen mango and berries. Coconut and mango are a great taste combination. Definitely one of my summer favorites!

How to make Mango-Coconut Overnight Chia Oats

Making mango-coconut overnight chia oats is really easy. Just measure out the oats, chia seed and stevia leaf powder and place them into two small to medium size Mason jars. I used small jars for this recipe.

Next, add water until it just covers the oats and seeds. Then add the canned coconut milk. If it is separated, blend it until its well mixed. Once blended, fill each jar to the rim with the milk, and cover. Place in the refrigerator overnight.

The next morning, spoon it into a small bowl or glass. If it’s too thick, add a little more coconut milk. Stir well. Finally, top the mango, berries and trail mix and that’s it!

Ingredients

  • 1 400 ml can Organic coconut milk
  • 1/2 Cup Filtered water
  • 1/2 Cup Gluten free organic oats
  • 4 Tablespoons Black Chia seeds
  • 1/2 Teaspoon Stevia leaf powder or 2 tablespoon sweetener of your choice
  • 1 large Mango Finely cubed
  • 1/2 Cup Organic frozen berries More for topping
  • 1/2 Cup Unsweetened trail mixture With goji berries, mulberries, toasted coconut slices and almond slices

Instructions

  • If using fresh mango, cube finely. Place on a small baking tray and freeze for at least 4 hour until frozen. Once frozen, place in freezer bag.
  • Measure 1/4 cup oats, 2 tablespoons chia seeds and 1/4 teaspoon stevia powder into each Mason jar. Stir to mix.
  • Add 1/4 cup organic frozen berries , and 1/4 cup mango cubes into jar.
  • Add enough water to just cover the oats and seeds. Top with coconut milk. If milk has separated blend before using. Pour remaining milk into a container and refrigerate.
  • Refrigerate jars overnight.
  • Pour overnight oats into a bowl or glass. Top with remaining mango cubes, more frozen berries and unsweetened trail mix as desired. Serve immediately.
