Nothing satisfies a sugar craving like super sweet and sure to please Vegan Blondies. These classic lunchbox treats are easy to veganize and impossible to resist.

When I was growing up, I was lucky because my mom did alot of home baking. We would get homebaked treats in our lunches and there would always be something home baked and sweet for an after-school snack. One of my favorites of these home baked goodies were Blondies. These super sweet blonde brownies, filled with walnuts and topped with caramel icing, were so good, they were almost addictive.
The main sweetener of both the cake base and icing is brown sugar which gives them rich caramel flavour. The squares are slightly chewy and full of walnuts, a nice contrast to the sweetness of the icing. Blondies are also very easy to make, perfect if you want a fast sugar fix.

How to make vegan Blondies
Vegan blondies are made up of a chewy walnut filled cake base and a thick caramel icing on top. They are very sweet, and maybe even a little too sweet for some tastes. It’s mainly the icing, so you can leave them plain or use less icing if you prefer a little less sweetness. The cake base tastes great on it’s own, so it’s entirely up to you.

Instructions
Step 1: Preheat the oven to 360°Fahrenheit. Lightly grease or line with parchment paper an 8×8 cake pan. Set aside. Melt the butter in a microwave or small pot. Pour it into a medium large mixing bowl. Add the sugar and beat with mixer or by hand until sugar is dissolved. Add the vanilla and flax eggs and stir well until completely mixed.

Step 2: In another bowl combine the flour and baking power. Whisk until mixed and add to the butter and sugar mixture. Stir well until mixed. Add the chopped walnuts and stir again.

Step 3: Spoon the mixture into a 8×8 baking dish. Bake for 25-30 minutes or until a testor placed in the center comes out clean.

Step 4: While it’s baking, make the icing. Start by melting the butter in a small pot. Add the sugar and stir until it’s bubbling. Remove the pot from the heat and add the milk. Stir to mix. Return to stove and heat, stirring until it returns to boiling, about 20 seconds. Remove from heat and let cool slightly, about 2 minutes.

Step 5: In a small bowl combine the icing sugar and cornstarch. Whisk to mix. Add the icing sugar and cornstarch to the sugar mixture in the pot. Beat with a mixer until it lightens to a caramel colour and becomes creamy and smooth. It should be very stiff and able to hold it’s shape.

Step 7: Once the Blondies are baked and removed from the oven, let cool on a baking rack while still in the pan.

Step 9: After the Blondies have cooled, add the icing. You can also sprinkle chopped walnuts or mixed nuts on top. Let the Blondies cool completely in the the pan and then refrigerate for at least 1 hour.

Step 10: Remove from fridge and cut into small squares. Keep squares refrigerated in a covered container or freeze them for later.

Vegan Blondies
Ingredients
- 1/2 cup butter
- 3/4 cup brown sugar packed
- 2 chia or flax seed eggs 2 tablespoons chia or flax seeds mixed 1/2 cup water, let sit for 15 minutes
- 2 teaspoons vanilla
- 2 teaspoons baking powder
- 1 1/2 cup gluten free flour
- 2 1/4 cup chopped walnuts
Icing:
- 1/4 cup vegan butter
- 1/2 cup brown sugar
- 2- 1/2 tablespoons milk
- 1/4 cup cornstarch
- 1 cup icing sugar
Instructions
- Preheat oven to 350 degrees F.
- Lightly grease an 8×8 pan and set aside.
- Melt butter in the microwave or on the stove over low heat in a small saucepan.
- In a medium sided bowl, add the melt butter and stir in brown sugar.
- Add chia eggs and vanilla; beat until smooth.
- Add dry ingredients and mix well.
- Add 2 cups walnuts and stir.
- Spoon into cake pan and bake for 25-30 minutes.
- Make Icing: In a pot heat the butter and brown sugar until boiling. Remove from heat.
- Add milk and stir, return to stove until boiling, about 20 seconds.
- Remove from heat and let cool slightly for 2 minutes.
- Add icing sugar and beat until smooth golden colour and it can hold it's shape.
- Make Blondies: Let cake completely cool.
- Once cake is completely cooled, spread icing on top.
- Sprinkle with chopped walnuts and refrigerate until icing is set.
- Cut into 16 squares. Store covered in the refrigerator.
